Summer Garden Frittata Recipe
This tasty treat recently won third place in the 2005 AgriMissouri Chef Contest. Made with all Missouri-made ingredients, it’s sure to please the folks back home!

Ingredients:
Eggs:

  • 15 Missouri Eggs
  • 1 cup of Ranch dressing
  • Farmer’s Market Fresh Basil - 20 leaves, minced and portion halved (half of this will be used at the end of preparation)
  • Farmer’s Market Fresh Dill - 1 heaping tsp.
  • Turmeric - 1 tsp. (adds beautiful color!)
  • Hot pepper flakes - ½ tsp.
  • Salt and Pepper to taste

Farmer’s Market Fresh Vegetables:

  • ½ Onion- diced
  • 4 to 5 Garlic cloves - minced
  • 2 medium Potatoes - cubed
  • 3 Zucchinis - diced
  • 1 Red bell pepper - diced
  • 1 cup of Broccoli - cut in small pieces
  • 1 cup of Carrots - sliced or cubed
  • 5 Medium to Large Tomatoes - sliced

Missouri Morning Land Cheeses:

  • 3 cups of any of the following, or a combination of them!
    Medium or Sharp Cheddar cheese
    Hot Pepper Colby
    Colby
    (My personal preference is the Hot Pepper Colby and the Cheddar combined!)

Garnish and Accompaniment:

  • Missouri Morning Land Sausage Links
  • Homemade bread or English muffins
  • Fresh tender leaves of Basil from Farmer’s Market
  • Farmer’s Market Strawberries and Blueberries
  • Ray’s Gourmet Salsa (made in Missouri!)

Utensils:

  • 1 Large and deep 12 inch skillet that can be placed in the oven
  • 1 Spatula

Directions:

  1. Break eggs into a bowl and add ALL of the ingredients in the "Eggs" section. Use blender or hand blend and keep overnight in the refrigerator
    **Remember to keep half of the minced Basil and the sliced Tomatoes for the final stage!
  2. Brown Sausage links in a separate skillet and keep warm
  3. Sauté Onions and Garlic in a half butter and half oil combination
  4. Once Onions and Garlic are golden, add the cubed Potatoes and sprinkle some Salt and Pepper
  5. Brown Potatoes with the Onions and Garlic
  6. Add the Egg mixture on top of Potatoes
  7. Add all Farmer’s Market vegetables
  8. Set stove to Med. to Med.-Hi and allow the Frittata to start cooking
  9. When Eggs begin to ‘bubble’ insert spatula into the egg/veggies and move the contents over half an inch to allow the runny Eggs to travel to the bottom of pan. Do this continually all over so the Eggs cook thoroughly and to avoid burning the bottom of the Frittata
  10. When Eggs are almost set, yet they are still a bit runny on top, place skillet in the oven set to broil. Allow Eggs to finish firming
  11. Bring out skillet and spread the sliced Tomatoes evenly over the top
  12. Sprinkle other half of minced Basil on top
  13. Add Cheeses and place back under the broiler
  14. Wait until Cheese melts and turns golden brown
  15. Bring out the skillet and slice the Frittata as you would a pie!
  16. Serve the slices of Frittata accompanied by your Homemade bread or English muffin, 2 or 3 Sausage Links, and add 2 or 3 spoons full of Ray’s Gourmet Salsa on top or on the side.
  17. Place a couple of tender Basil sprigs on top of the Frittata
  18. Garnish the plate with some Strawberries and Blueberries
